So, for the first of my cupcakes this year, I did “Ultimate Chocolate Cupcakes”.
I’m using a cookbook that’s just called “The Cupcake” I can’t even find it on Amazon to share with you! But it’s brilliant, I got it for Christmas and I love it.
Well, i made the cupcakes, and they weren’t very cupcakey. But my brother-in-law Randy (who’s the officialish cupcake tester) helped me figure out why.
scant 1 cup self-rising flour
1/2 teaspoon baking powder
1 and 1/2 tablespoon unsweetened cocoa
1/2 cup butter (softened)
generous 1/2 cup superfine sugar
2 extra large eggs, lightly beaten
2 oz semisweet chocolate (melted)
Preheat the oven to 350 degrees (F) and put 14 paper liners into shallow muffin pans.
Sift the flour, baking powder and coca into a large bowl.
Add butter, superfine sugar, add eggs and beat together until smooth.
Fold in the melted chocolate.
Spoon the batter into the paper liners, bake in the preheated oven for 15-20 minutes, or until risen and firm to the touch.
Transfer to a wire rack and let cool.
A few tips:
Make sure you use Extra-Large eggs, if you don’t, the cupcakes’ll come out really dry. The same thing with “superfine” sugar. There definitely is a difference between “superfine” and “granulated”. It’s not confectioners/powdered sugar either, and “superfine” isn’t all that easy to find. I couldn’t even find it.
